Chicken Breast / thighs - 500g
Coriander - 1 bundle
Mint - 1/2 bundle
Green Chillies - 2-3
Greek Yogurt - 1/2 cup
Onion - 1 large
Ginger Garlic Paste
Turmeric
Garam Masala
Salt
Lime
Step 1
Toss your coriander, mint, green chilies, and yogurt into a blender. Whiz it until it’s a smooth, bright green sauce. Warning: It smells so fresh you’ll want to eat it with a spoon, but wait the chicken needs it more!
Step 2
Heat a splash of oil in a pan. Sauté your chopped onions until they’re soft and golden. Stir in a tablespoon of ginger-garlic paste and cook until the raw smell disappears (about 2 minutes).
Step 3
Add your chicken pieces to the pan. Sprinkle in some turmeric and salt. Cook until the chicken is sealed and slightly white on the outside.
Step 4
Pour that gorgeous green sauce from the blender over the chicken. Turn the heat down to a simmer. You want the chicken to soak up all that herbal goodness without the yogurt curdling.
Step 5
Cover and cook for about 10–12 minutes. If the sauce looks too thick, add a tiny splash of hot water. Finish with a teaspoon of Garam Masala and a squeeze of lime to make the flavors pop.
Serve it like a Pro
Pair your Hariyali Chicken with fluffy Basmati rice or some buttered Naan. It’s a “Modern Heritage” masterpiece that looks as good as it tastes.
